Banana Fritters
Ingredients
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup brown sugar
- 3 bananas mashed
- 2 eggs
- 2 tablespoons butter or margarine melted
- 2 teaspoons vanilla flavoring
- 1/4 cup milk
- 1 cup oil
- Confectionery sugar
Instructions
- Whisk together the dry ingredients in a bowl. (Flour, baking powder, cinnamon, sugar, and salt) Add eggs, butter, vanilla, milk and bananas and mix well with a spoon.
- Heat the oil in a skillet. Drop mixture into hot oil (I use an ice cream scoop full for each fritter). Brown on both sides. Remove and drain on paper towels. Sprinkle with confectionery sugar.
Notes

Hi! I’ve just finished making the banana fritters. YUM! I don’t usually fry things in oil, so I had a bit of a time adjusting the temp.
Could you give me a tip on how to prevent the middle from being uncooked without over browning the outside?
Should the hot oil be a certain temp?
I appreciate it!
