Bacon Cheddar Potato Casserole

This casserole is wonderful to take to any holiday meal or event.  If your family and friends like potatoes they will love this casserole.  My family loves potatoes and I am always looking for new ways to make them when we get together.  I recently made these for our Labor Day weekend cookout and they went over really big.  You could double this recipe or cut it in half for just a few people.  It keeps well refrigerated and can be warmed up in the oven or microwave.  You might also like to check out our recipe for Cajun roasted potatoes.

Bacon cheddar potato casserole is one you will return to again and again even if you are just making for family at home.

6 cups chopped potatoes

6 pieces bacon, cooked and chopped (save a little for garnish)

3/4 cup mayonnaise

2 cups shredded cheddar cheese, divided

1 cup chopped green onion or can use regular onion

1/4 teaspoon black pepper

1/2 teaspoon salt

2 teaspoons minced garlic

1/4 cup sour cream

Put potatoes in a large mixing bowl, add cooked bacon, mayonnaise, 1 3/4 cups shredded cheddar cheese, chopped onion, black pepper, salt, garlic, and sour cream.  Mix all ingredients together and place in a sprayed 9 x 13 baking dish.  Cover with foil and bake in preheated 350 degree oven for 45 minutes.  Remove foil, add the other 1/4 cup cheddar cheese, extra bacon and onion if desired and cook another 15 to 20 minutes.  Makes 6 to 8 servings.  Enjoy!
