Apricot Honey Pork Loin - The Southern Lady Cooks

Apricot honey pork loin Ingredients Needed:

Pork loin

Cooking oil (I use Canola)

Apricot preserves

Honey

Onion

Salt

Orange juice

Spicy brown mustard or mustard of your choice

Minced garlic

Black pepper

Soy sauce

fresh chopped parsley for garnish, Optional

 

Notes: The recipe makes a great weeknight dinner but it’s also wonderful to serve for any small gathering. Add our onion soup potatoes and you’re set.

Ingredients
 

  • 1 2 to 3 pound pork loin
  • 3 tablespoons cooking oil I use Canola
  • 1/3 cup apricot preserves
  • 1/4 cup honey
  • 1/2 cup chopped onion can use regular or green onions
  • 1 teaspoon salt
  • 1/2 cup orange juice
  • 1 tablespoon spicy brown mustard or mustard of your choice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon black pepper
  • 1 teaspoon soy sauce
  • fresh chopped parsley for garnish Optional

Instructions
 

  • Slice pork loin crosswise in 1/4 to 1/2 inch slices. Brown slices on both sides in oil on top of the stove. Whisk together remaining ingredients in a bowl. Place browned pork loin slices in a casserole dish and pour apricot and honey mixture over the slices.
  • Cover with foil and bake in preheated 375 degree oven for 35 to 40 minutes. Can add chopped fresh parsley before serving. Makes approximately 8 servings depending on the size of your pork loin. Great served over rice or can serve with mashed potatoes.

    I want to make this with a pork shoulder which is juicier than a loin. Add the flavorings as a sauce brushed over the roast and then do it in a crock pot. The gravy should be wonderful. Love fruit roasted with pork.5 stars

    Patti, my husband and I are both diabetic and I am surely going to make this with a couple of tweeks to it. Will use (already have) no sugar added apricot preserves. That is really the only thing in there that would be off our diet. But…when you consider 1/2 cup of preserves, honey, and orange juice over 8 servings it would amount to very little anyway.5 stars
