BLACKBERRY CHEESECAKE

❤️WHY WE LOVE THIS RECIPE

If you have followed our site for any amount of time you know that we LOVE blackberries. We have many delicious blackberry recipes, which I will link at the bottom of this post. This no bake cheesecake is easy to make and the blackberries just makes it that much better.

🍴KEY INGREDIENTS

  • Graham Crackers
  • Quick Cooking Oats
  • Walnuts or pecans
  • Brown Sugar
  • Butter
  • Cream cheese
  • Confectioners sugar
  • Frozen whipped topping
  • Topping Ingredients Needed:
  • Fresh blackberries
  • Sugar
  • Cornstarch
  • Water

🍽️HOW TO MAKE

This cheesecake is really easy to make and you must make the crust. You can always just use a store bought graham cracker crust but I promise you the homemade crust is amazing. Every time I serve this dessert people ask about the crust.

COOKING STEPS

Step 1
Combine all crust ingredients. Press into 9 inch regular pie shell. Bake in preheated 350 degree oven for 15 minutes. Let cool before adding pie filling.

Step 2
Combine cream cheese and confectioners sugar in a bowl, mix together well. Fold in whipped topping and spread evenly into graham cracker crust. Put in fridge and let cool for around 3 hours.

Step 3
Combine all topping ingredients and bring to a boil, continuously stirring so it doesn’t burn. Cook for around 2 minutes to thicken. Remove from stove and let topping completely cool. Pour over cheesecake after it has been refrigerated for about 3 hours. Keep this cheesecake refrigerated.

⭐TIP

This cheesecake is better the next day so you can easily make this a day in advance. I like to make this one the day before, let it sit the 3 hours then add the topping and let it sit over night.

Crust Ingredients

  • 1.5 cups graham crackers crumbs

Blackberry Cheesecake Ingredients

  • 1 8 ounce package of cream cheese, softened
  • 1 cup of confectioners sugar
  • 1 8 ounce container of frozen whipped topping, thawed (coolwhip)

Topping Ingredients

  • 2 cups of fresh blackberries
  • 1/2 cup of sugar
  • 1 tablespoon of cornstarch
  • 1/2 cup of water

    Do you have to use gluten free crumb crust for this cheesecake?

      No, the recipe states use a “Graham cracker crust (use gluten-free graham cracker crust for this to be a gluten-free cheesecake). If you don’t want the recipe to be gluten-free, don’t use a gluten-free crust.

    I made this very easy recipe with the abundance of blackberries we had.It was wonderful,I changed the cream cheese to 1.5 blocks.and did 2 cups whipping cream.Set up beautifully and was soo good,husband bought what I needed now wants me to make another one.Thank you for sharing your recipe.
