Blackberry Cheesecake

This no bake cheesecake is so simple to make you will want to make it for every gathering! The homemade crust takes this one to the next level!

Ingredients

Crust Ingredients

  • 1.5 cups graham crackers crumbs
  • 1 cup quick cooking oats
  • 1 cup nuts finely chopped walnuts or pecans
  • 3 tbsp brown sugar
  • 12 tbsp butter melted

Blackberry Cheesecake Ingredients

  • 1 8 ounce package of cream cheese, softened
  • 1 cup of confectioners sugar
  • 1 8 ounce container of frozen whipped topping, thawed (coolwhip)

Topping Ingredients

  • 2 cups of fresh blackberries
  • 1/2 cup of sugar
  • 1 tablespoon of cornstarch
  • 1/2 cup of water

Instructions

Crust Instructions

  • Combine all crust ingredients. Press into 9 inch regular pie shell. Bake in preheated 350 degree oven for 15 minutes. Let cool before adding pie filling.

Cheesecake Instructions

  • Combine cream cheese and confectioners sugar in a bowl, mix together well. Fold in whipped topping and spread evenly into graham cracker crust. Put in fridge and let cool for around 3 hours.

Topping Instructions

  • Combine all topping ingredients and bring to a boil, continuously stirring so it doesn't burn. Cook for around 2 minutes to thicken. Remove from stove and let topping completely cool. Pour over cheesecake after it has been refrigerated for about 3 hours. Keep this cheesecake refrigerated.
