Tropical Rice Peanut Salad The Southern Lady Cooks

This tropical rice peanut salad is INSANELY good. It’s the easiest dish to make, and honestly, I could eat an entire bowl of it….it’s just THAT delicious! The flavor is off the charts, and it’s very refreshing. I love to serve this dish with barbecue sandwiches in the summertime. This simple salad makes a wonderful addition to any potluck, brunch, or lunch. It’s fancy enough for a special occasion, but it’s also perfect for a weeknight dinner. The peanuts, pineapple, oranges, and onions go together SO well. I can’t recommend this easy side dish enough.

Tropical Rice Peanut Salad Ingredients Needed:

Cooked white rice

Mandarin oranges, drained

Pineapple tidbits, drained

Salty peanuts

Mayonnaise

Chopped green onion

Pepper to taste

Recipe Notes: This is such a simple salad! I wouldn’t make any substitutions with this recipe because it’s the flavor of all the ingredients that makes this dish really shine.

Ingredients
  

  • 2 cups of cooked white rice
  • 1 cup of mandarin oranges drained
  • 1 cup of pineapple tidbits drained
  • 1 cup of salty peanuts
  • 1 cup of mayonnaise
  • 1/2 cup of chopped green onion
  • Pepper to taste

Instructions
 

  • Combine all ingredients and refrigerate for at least two hours before serving.
