SHRIMP PASTA SALAD
My family loves this shrimp pasta salad. It is so good using fresh garden vegetables along with the pasta and shrimp. You can do this using other meats, too, but we love it with the shrimp. So refreshing in the summer months and great the next day too!
Shrimp Pasta Salad
2 to 3 cups shrimp, cooked and peeled
2 cups rotini pasta, cooked al dente according to package directions (could use any kind of pasta)
2 eggs, boiled and chopped
1 large tomato, chopped
1/2 cup radishes, chopped
1/2 cup celery, chopped
1 small onion, chopped or can use several green onions and tops
1 medium sized cucumber, peeled and chopped
1 medium green pepper, chopped
1/4 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 tablespoon sugar
1/2 teaspoon white vinegar
1/2 cup mayonnaise
Cook pasta and drain, add remaining ingredients, toss well. Refrigerate for 2 to 3 hours before serving. Makes 8 to 10 servings. Enjoy!

Can I use white wine vinegar instead?
Yes, I think that would be fine Norma.
I have a niece who’s addicted to shrimp everything! Her birthday was upcoming & I was stymied as to what to get her. Well, lo and behold, a friend of mine sent me your recipe for the shrimp pasta salad :& I thought that would be a unique gift to give her for her birthday. So, I invited her over for lunch and presented the salad to her and I thought she would absolutely melt! She was elated, and said no one, but no one could have given her a more pleasant and tasty present. She wanted me to send a note of thanks to you for making her birthday so very special.

Have you ever used rice or crouscous?
I have not in this salad but you could if you wanted.

Hello…what would be a good alternative for the mayo. I’m lactose intolerant and mayo is a NO NO.

there is no dairy in mayo. It is egg, oil, vinegar and spices.
I always thought eggs WERE dairy , or am Iv wrong ? Please tell me !
Eggs are not dairy. My son has been allergic to dairy since birth and was allergic to eggs until he was 5 years old, when he outgrew the egg allergy. He has been able to eat mayonnaise ever since.
Dairy ingredients are made from cow’s milk, which also includes most cheese (except goat or sheep cheese), cottage cheese, cream cheese, sour cream, yogurt, butter, etc.
With garden fresh ingredients, your shrimp pasta salad had to be extra special.
This looks like a keeper. Maybe I’ll take it to our picnic next week.

This is, perhaps, the 5th time another fellow blogger has posted either what I’d just posted OR I’d been thinking about posting. I recently posted a recipe for Maple Pecan Scones… and learned that another blogger was celebrating “International Scone Week” on her website. (I hope I wasn’t too late for my submission!!) A wonderful blogger, who specializes in Italian dishes, just posted a terrific recipe for Spaghetti Carbonara – and I received a post from another blogger with her own version of the same thing. Here’s what I think, “Great Minds Think Alike”!! I had the “idea” of “inventing” a recipe for some sort of shrimp/pasta salad…. and here you are with a fabulous fabulous recipe for it!! I LOVE your blog, by the way!!
