Shrimp Pasta Salad

Ingredients

  • 2 to 3 cups shrimp cooked and peeled
  • 2 cups rotini pasta cooked al dente according to package directions (could use any kind of pasta)
  • 2 eggs boiled and chopped
  • 1 large tomato chopped
  • 1/2 cup radishes chopped
  • 1/2 cup celery chopped
  • 1 small onion chopped or can use several green onions and tops
  • 1 medium sized cucumber peeled and chopped
  • 1 medium green pepper chopped
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sugar
  • 1/2 teaspoon white vinegar
  • 1/2 cup mayonnaise

Instructions

  • Cook pasta and drain, add remaining ingredients, toss well.  Refrigerate for 2 to 3 hours before serving.
