SAUSAGE AND CABBAGE CASSEROLE

Sausage cabbage casserole is a great comfort food dish. This dish reheats well too. If you love cabbage you will love this one. We like it with cornbread muffins or Southern cornmeal hoecakes. This makes a quick and easy weeknight meal your family and friends will love.
Sausage and cabbage casserole is easy and delicious.
Cabbage, shredded or cut in pieces
Water
Black pepper
Salt, optional
Diced tomatoes
Pork breakfast sausage
Onion, chopped
Green pepper, chopped
Oregano or Italian seasoning
Garlic, chopped
Cheese, shredded (I used a combination of Mexican and parmesan but you can use cheddar or any cheese you like)

You could also use smoked sausage in this casserole. Make it healthy by using turkey sausage and fat free cheeses, too. This recipe is super versatile and loaded with flavor. Great for a busy weeknight, you can throw this together quickly!

Sausage Cabbage Casserole
Ingredients
- 1/2 head cabbage shredded or cut in pieces
- 1/2 cup water
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt Optional
- 1 14.5 ounce can diced tomatoes, undrained (could use tomatoes and green chilis, too)
- 1/4 cup water
- 1 pound pork breakfast sausage
- 1/4 cup onion chopped
- 1/4 cup green pepper chopped
- 1 teaspoon oregano or Italian seasoning
- 1 clove of garlic chopped
- 1 1/2 cups cheese shredded (I used a combination of Mexican and parmesan but you can use cheddar or any cheese you like)
Instructions
- Steam the cabbage with 1/2 cup water in the microwave for 5 minutes and drain. Spread cabbage in the bottom of a sprayed casserole dish and sprinkle with black pepper and salt. Pour the tomatoes over the cabbage along with 1/4 cup water.
- Cook sausage, onion, green pepper, oregano and garlic on top of the stove until sausage is cooked. Spread over cabbage. Add cheese on top.
- Bake covered in a preheated 350 degree oven for 60 minutes, removing cover the last 15 minutes of cooking. Makes about 8 servings.

I made this according to ingredients, but I changed how I cooked the cabbage. I cooked the sausage, peppers and onions in a frying pan and removed from the pan when done. I then added about 3 tblsps. of water to the pan and added the cabbage. I covered and let it steam for 5 minutes. I think cooking it this way helps flavor the cabbage more with the juices and seasonings left behind in the pan. Pretty dang tasty!
I followed this advice. Then of course I managed to forget to cover the casserole until about 15 minutes into baking. Luckily, it turned out great after following directions other than using your cabbage-cooking method and accidentally adding parmesan between the cabbage layer and the sausage (I used diced smoked sausage) and veggies layer. It’s not pretty, but it is delicious. Thanks!

Can you use cheese slices and if so, when should you do so.
You could and add it about 15 minutes before it’s done cooking. You just want the cheese to melt.
I made this using Italian sausage and bagged coleslaw. This was absolutely delicious! I will definitely make this again and again.

This recipe is very flavorable. I had both a tube of Bob Evans hot breakfast sausage and some thick cut American cheese I needed to use up. I threw in some gruyere, too. I thought the recipe would be light on onion and green pepper, but 1/4 cup of each was just right. The next time I make this, I will probably use different cheeses; but I think any combination of any cheese you like would be good. This recipe is a keeper.

I followed the recipe I didn’t add the 1/4 cup water. I’m glad I didn’t because there was like 1/2 inch water in the bottom. I’m not sure what happened. We enjoyed the taste of it though, and I’d make it again except I would sauté the cabbage instead of microwave.
I made this with a hot breakfast sausage, added a little too much water, and slightly less cheese, but it was still terrific. I hesitated at the tomatoes (always before I’d only done rice, sausage, & cabbage), but this dish was really good-tasting. It makes a lot of food, but it reheats well.
I made this about 2 weeks ago for my fiancé. He was skeptical. He really did not think he’d like it because he doesn’t care for boiled cabbage dishes. He loved it! So much he bought everything we needed to make it again tonight! I loaded mine with more pepper (red and green) and onion this time. I also used fresh ground sausage. It was so good!

I can usually imagine what my recipe will taste like but I couldn’t really imagine this one. It was more delicious than I thought it would be! I did half breakfast sausage and half lean turkey, half cheddar and half parmasean. I will absolutely make it again. If you’re seeking a hearty casserole without pasta or rice, this would be a terrific choice.

I just use a 2 quart baking dish. Honestly.. whatever you have that it will fit in and can be covered.

Made this over the Memorial Day weekend and I should have made a double batch! I too used Rotel tomatoes (mild). Next time I have this gathering I will use 1 batch Rotel (mild) and one batch with fire roasted tomatoes.
