ROASTED ITALIAN PARMESAN POTATOES
Roasted Italian parmesan potatoes are so good!
My family loves these roasted Italian parmesan potatoes and can’t get enough of them. They make a great side dish for any meal and are so easy to prepare on a busy weeknight for dinner or serve them anytime. You could double the recipe for several people. They keep well in the refrigerator for several days and are great reheated in the oven or microwave. Children will love these potatoes as well as adults. I love eating these little potato bites cold as a snack right out of the refrigerator. They are great dipped in ranch dressing, too! Roasted Italian parmesan potatoes will become a favorite when you need a little something different to accompany a meal.
5 to 6 cups red-skinned potatoes, cut in bite-sized pieces
4 tablespoons olive oil
4 tablespoons butter, melted
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 to 1/2 teaspoon black pepper
1/4 teaspoon smoked paprika
1 cup shredded parmesan cheese
Salt to taste
Whisk together olive oil, melted butter, garlic powder, oregano, basil, black pepper and paprika in a bowl. Toss potato bites in oil mixture and spread on a baking sheet that is sprayed with cooking oil. Roast in a preheated 425 degree oven for 15 minutes. Remove potatoes from oven turn with a spatula, sprinkle on shredded parmesan cheese and put back in oven for 15 more minutes. Remove and add salt to taste before serving. Makes about 6 servings. Enjoy!
