CAJUN SAUSAGE AND POTATOES
Cajun sausage and potatoes is easy in the crock pot and delicious.
This recipe for Cajun sausage and potatoes is the perfect comfort food. We like lots of black pepper on this recipe but you can adjust to your taste. Make it in the crock pot or slow cooker with just a few ingredients for a great weeknight meal your family will love. The recipe is so good served with our Southern cornmeal hoecakes.
You could cut this recipe in half for two people and it keeps well refrigerated and reheated for several days. You could also add other vegetables you might have on hand and need to use up such as broccoli or even green beans.
Cajun sausage and potatoes is a great recipe when you are in a hurry or for a busy day.
1 (1 pound) package Cajun style andouille sausage (could use smoked sausage, kielbasa or even turkey sausage)
5 to 6 potatoes, peeled and cut into chunks
1 (10.5 ounce) can cream of potato soup (do not dilute)
1 (14 ounce) can chicken broth
1 large onion, peeled and chopped
1 teaspoon Cajun seasoning (check out our recipe for making your own Cajun seasoning)
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Add potatoes, onion and sausage to a 3 quart crock pot or slow cooker. Pour in cream of potato soup and chicken broth. Add Cajun seasoning, garlic powder, salt and pepper. Cook on low for 6 hours or high for 4 hours. Makes 6 to 8 servings. Enjoy!
Tip: Pepper is one of the most popular spices but ground pepper loses its flavor quickly. It is best to use a pepper grinder so your pepper will be fresh and flavorful.

No, we do not pan-fry the sausage first. The sausage is already cooked. You certainly can, but it’s not necessary.
Made this and followed recipe exactly.. However, sauteed leeks, green pepper and mushrooms to serve on the side but after sausage and potatoes were done threw it all in the mix. … Was not necessary but a nice add in and would do it again… Served with a Jerk cantaloupe and cucumber salad… Definitely a comfort food meal..
