PUMPKIN BREAD PUDDING
Pumpkin bread pudding is a must! It is always a hit with my family
Add this wonderful Pumpkin Bread Pudding to your holiday menu! Super easy to make and the taste is amazing. This was really an experiment that turned out delicious. We had some sourdough bread leftover so we used that, but you can use whatever bread you like. The pumpkin with the pecans and spices really turned out great. Most bread puddings have a sauce and we included a link to ours, but honestly it doesn’t need it.
Pumpkin Bread Pudding
6-7 cups of crumbled bread (I used sourdough)
1 cup of hot water
1/4th cup of butter, melted
1 teaspoon of vanilla
1/2 cup of brown sugar
1 teaspoon of nutmeg
1/2 teaspoon of cinnamon
1/2 cup of whipping cream
2 eggs
1 cup of pure pumpkin
Topping:
1/2 cup of brown sugar
1/2 teaspoon of cinnamon
1/2 teaspoon of allspice
1 cup of chopped pecans
Preheat oven to 350 degrees. In a mixing bowl, add bread and pour hot water over it. In a separate bowl, combine remaining ingredients and mix well with spoon. Add bread and mix well. Spray a 9X9 baking dish or small casserole dish and pour mixture into bowl. Next combine topping ingredients together and top the breading mixture. Bake for 35- 40 minutes. Makes 8 servings. Delicious topped with ice cream or whipped topping.
You can always top it with this wonderful vanilla sauce.
