Why You’ll Love These Peanut Butter Pumpkin Bars

We never thought of this combination until we saw a similar recipe in an old cookbook. The author said it was a great way to use extra pumpkin during the holiday season. We decided to try our own version and I will admit.. they are delicious! They have the consistency of a brownie and the swirl just make them even more moist. If you are not a fan of pumpkin you could easily just leave it out.

If you love peanut butter and chocolate, you can leave out the pumpkin. I think you would have to lower the cooking time, since the ingredients will have changed somewhat. We use crunchy peanut butter but I believe any would work. I have not tried making this with any other nut butters.

Peanut Butter Pumpkin Swirl Bars

Ingredients
 

  • 6 tablespoons butter melted
  • 1/2 cup crunchy peanut butter
  • 2 tablespoons vanilla extract
  • 3/4 cup 100% pumpkin
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 rounded teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 1/2 cups chocolate chips

Instructions
 

  • Melt butter and add peanut butter, vanilla extract, pumpkin, eggs, brown sugar and white sugar. Mix with mixer until creamy.
  • Whisk together salt, flour and baking powder. Pour into creamed mixture and mix well.
  • Spray a 9 x 13 baking pan and add batter. Sprinkle with chocolate chips. Bake in preheated 350 degree oven for five minutes, remove and swirl chocolate chips into batter with a knife.
  • Return to the oven and bake and additional 25 to 30 minutes checking for doneness as ovens vary. Cool and cut into squares.
