Million dollar rice salad is an old-fashioned recipe that has been around a long time.

Million Dollar Rice Salad

Million dollar rice salad is a good salad for pot luck meals, church gatherings and picnics. This salad is great in summer or winter and for any holiday meal. My family loves it. This recipe makes a lot. It keeps well in the refrigerator and the recipe could be cut in half or even doubled for a large group or event.

Million dollar rice salad is wonderful for any holiday.

1 (8 ounce) package cream cheese, softened

1 1/2 tablespoons white granulated sugar

1 tablespoon mayonnaise or Miracle Whip

2 cups uncooked rice, cooked (I use instant rice but could use any kind)

1/2 cup maraschino cherry halves (about 15 whole cherries cut in half)

1 (20 ounce) can crushed pineapple, drained

1 (11 ounce) can mandarin oranges, drained

2 cups miniature marshmallows

1 cup heavy whipping cream, whipped or can use cool whip

1/2 cup chopped nuts, walnuts or pecans

Mix together cream cheese, sugar and mayonnaise with mixer. Fold in cooked rice, cherry halves, pineapple, oranges and marshmallows. Add nuts. Mix with a spoon. Whip the cream with mixer until looks like cool whip and mix into the salad with a spoon. Refrigerate for at least 2 hours before serving. Makes 8 to 10 cups of salad. Enjoy!

Note: You can add about any kind of fruit to this salad such as grapes or bananas.

  1. I’m going to be making this delicious looking salad for this Christmas. You say it keeps well in the refrigerator. Was wondering h ow safe it would be to make it a couple of days before. Also there will be 14 people. Would an additional half added to the original recipe be enough or should I double it. They’re all fruit salad lovers…Thanks so much….Jeri

      I would think an additional half would be enough, but it’s completely up to you. I think you could make it 2 days in advance. Enjoy!

      1. Thank you for such a quick reply! Am going to make it two days early like you suggest. That fits right into my plans. I will try upping it another half first and if it doesn’t look like enough, I can easily make another half. I’m anxious to see how it goes over. It will be up against my frog’s eye salad that I have been making for many many years, but I’m sure this will be a big hit, too….

    1. I ONLY use paypal, you should too. It is the SAFEST way to pay because vendors NEVER get to see your card info. I have used them for over ten years now.
