Peach upside-down cake is an easy recipe and delicious.

Peach Upside-Down Cake

This peach upside-down cake is wonderful if you need a dessert in a hurry and want to throw something together with ingredients you probably have on hand plus it is delicious.  You can use canned, frozen or fresh peaches.  Just be sure if you use canned or frozen the peaches are drained well and I dry them off with a paper towel. I would thaw frozen peaches, too.  This keeps well for several days refrigerated and is just as good cold as it is hot.  You might also like our recipe for Pineapple Upside-Down Cake made in an iron skillet.

Topping:

3 tablespoons butter

1/2 cup brown sugar

1 (29 ounce) can sliced peaches well drained

Ingredients for Cake:

1 1/3 cups baking mix (Bisquick, Jiffy Baking Mix or make your baking mix with our recipe)

3/4 cup white granulated sugar

3/4 cup buttermilk

1 egg

1 teaspoon vanilla extract

Melt butter in oven in a 9 inch round cake pan.  Stir brown sugar into melted butter in pan.  Arrange peach slices over butter and brown sugar.  Whisk together the baking mix and white sugar in a mixing bowl.  Add buttermilk, egg and vanilla extract.  Stir well with a spoon.  Spread over the peach slices.  Bake in a preheated 350 degree oven for 50 to 55 minutes or until center tests done when stuck with a fork. Remove from oven and let sit for 10 minutes to cool before taking out of pan.  Makes 1 nine inch round cake.  Enjoy!
