GROUND BEEF CASSEROLE
Mexican ground beef casserole is easy and delicious.

Mexican ground beef casserole will quickly become a favorite recipe to make on a busy weeknight for your family. It is so easy to make and provides a wonderful, comfort food meal. It is just as good reheated in the oven or microwave and keeps several days refrigerated. No matter how often I make this casserole there is seldom any left. This recipe is very versatile in that you can add spices, cheese and peppers you like.
Mexican ground beef casserole is a favorite with my family.
1 pound ground beef (could use ground turkey)
1 (8 ounce) can crescent rolls
1 (15.5 ounce) can black beans, drained (could use pinto beans)
1 1/2 cups chunky salsa
1/2 cup chopped onion
1 (4 ounce) can green chiles, drained
2 teaspoons taco seasoning (make your own using our recipe for taco seasoning)
1/4 teaspoon black pepper
1/2 teaspoon salt
1 cup shredded cheddar cheese (can use your favorite cheese)
Brown ground beef along with onions in a skillet on top of the stove and drain. Add black beans, salsa, green chiles, taco seasoning, black pepper and salt to hamburger and onion. Mix together and cook for 10 minutes on top of stove. Unroll and place raw crescent rolls in the bottom of a 11 x 7 sprayed baking dish. Pinch seems together on rolls to form a bottom crust. Pour ground beef mixture into baking dish on top of the crescent roll crust. Sprinkle on shredded cheese and place in a preheated 350 degree oven for 20 to 25 minutes to allow crust to bake. Remove and serve with a dollop of sour cream on top of each piece. Makes about 8 servings. Enjoy!

This casserole is delicious and easy! I added more onion and some garlic, and I used kidney beans instead of black beans because my husband isn’t a fan of black beans. TOTALLY YUMMY!!!!
Loved this recipe for our family of 6! Was the perfect weeknight dinner- will definitely be doing it again. I just added corn and pinto beans in addition to the other ingredients and left out the green chiles. Highly recommend!

I used onion, taco seasoning, seasoned salt, pepper, corn salsa, corn and bean salsa. Absolutely a keeper. Sweet with medium heat. Corn salsa gave it a totally different flavor.
