Mexican Ground Beef Casserole

This easy casserole is full of flavor and perfect for a weeknight dinner.

Ingredients

  • 1 pound ground beef could use ground turkey
  • 1 8 ounce can crescent rolls
  • 1 15.5 ounce can black beans, drained (could use pinto beans)
  • 1 1/2 cups chunky salsa
  • 1/2 cup chopped onion
  • 1 4 ounce can green chiles, drained
  • 2 teaspoons taco seasoning make your own using our recipe for taco seasoning
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese can use your favorite cheese

Instructions

  • Brown ground beef along with onions in a skillet on top of the stove and drain. Add black beans, salsa, green chiles, taco seasoning, black pepper and salt to hamburger and onion. Mix together and cook for 10 minutes on top of stove. Unroll and place raw crescent rolls in the bottom of a 11 x 7 sprayed baking dish. Pinch seems together on rolls to form a bottom crust.
  • Pour ground beef mixture into baking dish on top of the crescent roll crust. Sprinkle on shredded cheese and place in a preheated 350 degree oven for 20 to 25 minutes to allow crust to bake. Remove and serve with a dollop of sour cream on top of each piece.
