Mexican corn fritters are easy and delicious!

Mexican Corn Fritters

A fritter is usually something coated in batter and fried in oil.  These Mexican corn fritters will quickly become a favorite.  You can serve them with a meal or as an appetizer or make them just as a great treat.  If you like Mexican food, you will love these fritters and they are so versatile.  You can switch out ingredients and use what you enjoy best.  You might also like to check out our other best Mexican recipes, too.

Mexican corn fritters will not last long once you get a taste of these little gems.

1 1/4 cups yellow cornmeal

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon chili powder

1 teaspoon dried cilantro or can use fresh cilantro

1 (4.5 ounce) can chopped green chiles, drained (or could use any kind of peppers)

1/4 cup chopped green onions

1 1/2 cups fresh, frozen or canned corn

1 egg

1 cup black beans, drained (optional)

3/4 cup buttermilk, more or less

2/3 cup cooking oil, more or less

Whisk together the cornmeal, baking powder, baking soda, salt, black pepper, chili powder and cilantro in a large bowl.  Add green chiles, onions, corn, egg, beans and buttermilk.  Stir with spoon until batter is all wet.  Heat oil on top of the stove and drop by spoonfuls into hot oil.  Smash out flat with spatula and cook until brown on one side.  Flip over and brown on other side.  Drain on paper towels.  Makes about 12 fritters depending on size you make them.  Serve with your favorite Mexican shredded cheese, sour cream, salsa and leftover black beans on top or whatever toppings you like personally.  Enjoy!

Instructions

Notes

Serve with your favorite Mexican shredded cheese, sour cream, salsa and leftover black beans on top.
