Ingredients
1 1/4cupsyellow cornmeal
1teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1/4teaspoonblack pepper
1/4teaspoonchili powder
1teaspoondried cilantro or can use fresh cilantro
14.5 ounce can chopped green chiles, drained (or could use any kind of peppers)
1/4cupchopped green onions
1 1/2cupsfreshfrozen or canned corn
1egg
1cupblack beansdrained (optional)
3/4cupbuttermilkmore or less
2/3cupcooking oilmore or less
Instructions
Whisk together the cornmeal, baking powder, baking soda, salt, black pepper, chili powder and cilantro in a large bowl. Add green chiles, onions, corn, egg, beans and buttermilk. Stir with spoon until batter is all wet.
Heat oil on top of the stove and drop by spoonfuls into hot oil. Smash out flat with spatula and cook until brown on one side. Flip over and brown on other side.
Drain on paper towels.
Notes
Serve with your favorite Mexican shredded cheese, sour cream, salsa and leftover black beans on top.
