ITALIAN POTATO SOUP – Crock Pot Recipe
Italian potato soup is easy and delicious.
This Italian potato soup is comfort food your family will love. My family loves any kind of soup and I make it all year long. This one is great served with our Southern cornmeal hoecakes.
This soup keeps well for several days refrigerated and you could double or halve the recipe depending upon your needs. I made this with ground Italian sausage but you could use any kind of sausage that works for you. You can also make this soup on the stove top by just browning the sausage and adding ingredients to soup pot and cooking until potatoes are done. This soup would be good with toasted Italian bread or most sandwiches like grilled cheese. Our favorite lunch is always soup.
Italian potato soup is good anytime if you are a soup lover!
1 pound ground Italian sausage
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green sweet pepper
4 large potatoes, peeled and cut up
1 (12 ounce) can evaporated milk
1 (14.5 ounce) can chicken broth
1 cup water
2 tablespoons butter
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
Salt to taste
Brown sausage, celery, onion and sweet pepper in a skillet on top of the stove. Drain and add to a 3 quart crock pot along with remaining ingredients. Cook on low for 6 to 7 hours or high for 4 to 5 hours. Makes about 8 servings. Enjoy!
Note: This soup is delicious topped with your favorite shredded cheese.
