Italian Potato Soup

This soup is a twist on an old classic. It's delicious!

Ingredients

  • 1 pound ground Italian sausage
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green sweet pepper
  • 4 large potatoes peeled and cut up
  • 1 12 ounce can evaporated milk
  • 1 14.5 ounce can chicken broth
  • 1 cup water
  • 2 tablespoons butter
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste

Instructions

  • Brown sausage, celery, onion and sweet pepper in a skillet on top of the stove. Drain and add to a 3 quart crock pot along with remaining ingredients. Cook on low for 6 to 7 hours or high for 4 to 5 hours.

Notes

This soup is delicious topped with your favorite shredded cheese.
