Italian calico beans can be made in the crock pot or the oven.

Italian Calico Beans

This recipe for Italian calico beans is easy and so good.  It makes a lot so you could cut the recipe in half or make the whole recipe to take to any event or occasion. We love the twist to this recipe by making it with Italian spices and sausage.  When it comes to any kind of beans my family doesn’t leave much for leftovers.  These beans are good warmed over and keep for several days in the fridge.  I have not tried freezing this recipe but see no reason why you couldn’t.  You can use any kind of beans in this recipe so if you don’t like one, just substitute your favorites.  You might also like to check out our recipe for maple baked beans.

Ingredients for Italian calico beans:

1 pound ground Italian sausage

2 cloves of garlic, peeled and smashed or chopped

1 medium onion, peeled and chopped

1 (15 ounce) can pinto beans, do not drain

1 (10 ounce) package frozen lima beans

1 (15 ounce) can great northern beans

1/2 cup brown sugar

1 (8 ounce) can tomato sauce

2 teaspoons yellow mustard

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

2 teaspoons fresh chopped basil or 1 teaspoon dried

1/2 teaspoon ground thyme

1/2 teaspoon red pepper or cayenne (optional)

 

Italian Calico Beans

Brown the Italian sausage, the two cloves of garlic and the chopped onion in a skillet on top of the stove.  Remove and drain, if needed.  Combine the tomato sauce, brown sugar, yellow mustard, salt, black pepper, oregano, basil, thyme and cayenne and stir together.  Put the sausage mixture and all the beans in the crock pot (or a baking dish if you plan to cook these in the oven). Stir in the tomato sauce and spices.  Cook in crock pot for 4 to 5 hours on low or 2 to 3 hours on high.  If baking in the oven, bake at 375 for about 45 minutes.  Makes about 8 servings. Enjoy.
