Italian Calico Beans

Ingredients

  • 1 pound ground Italian sausage
  • 2 cloves of garlic peeled and smashed or chopped
  • 1 medium onion peeled and chopped
  • 1 15 ounce can pinto beans, do not drain
  • 1 10 ounce package frozen lima beans
  • 1 15 ounce can great northern beans
  • 1/2 cup brown sugar
  • 1 8 ounce can tomato sauce
  • 2 teaspoons yellow mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 teaspoons fresh chopped basil or 1 teaspoon dried
  • 1/2 teaspoon ground thyme
  • 1/2 teaspoon red pepper or cayenne optional

Instructions

  • Brown the Italian sausage, the two cloves of garlic and the chopped onion in a skillet on top of the stove. Remove and drain, if needed. 
  • Combine the tomato sauce, brown sugar, yellow mustard, salt, black pepper, oregano, basil, thyme and cayenne and stir together. Put the sausage mixture and all the beans in the crock pot (or a baking dish if you plan to cook these in the oven). Stir in the tomato sauce and spices. 
  • Cook in crock pot for 4 to 5 hours on low or 2 to 3 hours on high. If baking in the oven, bake at 375 for about 45 minutes.
