IRON SKILLET BANANA BLUEBERRY COBBLER

This cobbler is delicious! It is wonderful as a dessert with whipped cream or ice cream on top or with coffee. You can make it with pineapple chunks instead of blueberries or any other berry you like with bananas. It is good hot or cold. A great way to use up bananas you have on hand. We loved this banana blueberry cobbler.  You might also like our recipe for chocolate chip banana cake.

Iron skillet banana blueberry cobbler is a family favorite.

Cobbler:

1 cup self-rising flour
1/2 teaspoon ground nutmeg
1/2 cup sugar
1 cup milk
1 stick or 8 tablespoons or 1/2 cup butter, melted
4 bananas, peeled and sliced
1 cup blueberries
1 cup toasted coconut

Topping:

1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 cup self-rising flour
1/2 cup regular or quick-cooking oats
1 stick or 8 tablespoons or 1/2 cup butter, softened
1 cup pecans or walnuts

Spray a 10 inch iron skillet with cooking spray. Melt the butter in your skillet in the oven. (You could also make this in a 9 x 13 baking dish) Whisk together the flour, nutmeg, sugar and milk. Pour this into the butter and stir to mix. Add the banana slices on top of the mixture and then add blueberries. Sprinkle on toasted coconut. In a separate bowl mix brown sugar, cinnamon, self-rising flour and oats along with softened butter until like crumbs. Drop spoonfuls on top of the coconut. Sprinkle on nuts. Bake in preheated oven at 375 degrees for 45 minutes or until brown on top. Makes about 8 servings. Enjoy!

Note: To toast coconut spread out on a microwave safe plate and cook about 3 minutes. Stir once or twice to keep from burning.
