HEAVENLY CHOCOLATE OATMEAL COOKIES

Chocolate oatmeal  cookies are delicious and  will make your mouth water.  I bet you can’t eat just one! They are made with the drop technique, which makes them even easier to make! A change from just a regular oatmeal cookie and who doesn’t like chocolate!  I like anything made with oats and these will become a favorite.  Chocolate oatmeal cookies are great for any holiday or just anytime you want a snack.  These cookies are good with coffee or serve them to the kiddies with milk for a snack and put them in lunchboxes, too.  You might like to check out my recipe for Butterscotch Cookies, too.

1/2 cup butter or margarine
1/2 cup firmly packed brown sugar
1/2 cup corn syrup
1 egg
1 cup all-purpose flour
1/2 cup cocoa
1/4 teaspoon soda
1/2 teaspoon salt
1 1/4 cups uncooked quick-cooking oatmeal
1/2 cup chopped nuts (I used walnuts)
1/2 cup raisins
1/2 cup milk
 
Cream butter or margarine.  Add sugar gradually and cream until light and fluffy.  Add corn syrup and egg and mix well.  Combine dry ingredients; stir in oatmeal.  Add nuts and raisins. Add creamed mixture and milk to dry ingredients.  Drop by teaspoonfuls (I used an ice cream scoop and made bigger cookies) onto a sprayed cookie sheet.  Bake in preheated 350 degree oven for 15 minutes.  Yield: about 3 dozen depending on size you make the cookies.   Enjoy!
