BUTTERMILK CANDY WITH WALNUTS
This is a hard candy kind of like peanut brittle but with walnuts.
1 cup buttermilk 2 cups sugar 1 teaspoon baking soda 2 teaspoons corn syrup 2 tablespoons butter or margarine 1 teaspoon vanilla extract 1 cup walnut pieces Mix baking soda and buttermilk together in a 4 quart pan. Let stand one minute. Add sugar, corn syrup and butter and cook to soft ball stage or 240 degrees on candy thermometer. Remove from heat and add vanilla and nuts. Beat by hand until candy starts to thicken. Pour onto a greased or sprayed cookie sheet. Once hardened and cooled break into pieces.

I took mine off at 225 instead of 240 so it wouldn’t setup super hard like brittle….After it sets if I timed it right it will still be chewy….
