Ham tetrazzini is easy and delicious.

Ham Tetrazzini

Ham tetrazzini is a recipe you will make for your family over and over again as it is an easy weeknight meal or make it anytime just because it is so good.  This is great comfort food and makes quite a bit for a hungry family.  You could cut the recipe in half if making for two people and it keeps for several days. This dish reheats well on top of the stove or in the microwave

Ham tetrazzini is requested often by my family.

2 cups ham, cooked and chopped

8 ounces spaghetti, cooked according to package directions and drained

1/2 cup onion, chopped

1 (4 ounce) can mushrooms, drained

1 teaspoon minced garlic

2 tablespoon butter

1 (10.5 ounce) can cream of mushroom soup (do not dilute)

3/4 cup evaporated milk (can use regular milk)

1 (4 ounce) jar pimentos, drained

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup frozen peas

1 cup shredded cheddar cheese

Cook spaghetti, drain and set aside.  Melt butter on high in a large skillet, add onion, mushrooms and garlic. Cook until onions are browned. Turn heat to medium and add mushroom soup and milk along with ham, pimentos, salt, pepper and peas.  Fold in cooked spaghetti and add cheddar cheese.  Heat until cheese is melted and all ingredients are heated through.  Makes about 6 to 8 servings. Enjoy!
