These Cranberry Pecan Cookies are made with a cake mix and craisins. They are so easy and so good!

❤️WHY WE LOVE THIS RECIPE

We do a lot of baking during the holiday season and we are always looking for easy recipes and these are on the list. Only 5 ingredients and so good! These are perfect for any gathering and come together so quickly.

SWAPS

You can substitute the nuts with walnuts if you prefer. I also think any cake mix will work, we like the white, but a spice cake may be delicious. You could also add a teaspoon of vanilla or almond extract.

⭐TIP

Since these cookies are made with a white cake mix they do come out white, so we put them under the broiler for a VERY short amount of time to just add a little color. You don’t have to do this.

Cranberry Pecan Cake Mix Cookies

These cookies are only five ingredients and so easy. We love to make them around the holidays.

Ingredients
 

  • 1 box of White Cake Mix
  • 2 eggs
  • 8 tbsp of melted butter
  • 1 cup of Craisins
  • 1 cup of chopped Pecans

Instructions
 

  • Mix all ingredients together and chill in the fridge for an hour.
  • Preheat oven to 350. Spray a baking sheet with non stick spray. Use a spoon and drop cookies on cookie sheet. This dough is sticky so you may need to use two spoons in order to get the mixture off the one spoon. Drop golf ball size dough on the sheet.
  • Bake for 10-12 minutes or until golden around the edges. Makes 20-25 cookies depending on the size you make them.

    These are so good! I make them with a yellow sugar free cake mix and my husband loves them.

  2. Hi, yes I made them. Glad u said they’d be white color. Yes broiled abit too. Turned toasty delish. Ok so question. Why not use yellow cake mix?5 stars

    1. Hi Dee, if you read the post, it says you can use any cake mix you like. I like the white cake mix because it has a milder flavor, allowing the cranberries and the pecans to shine through. 🙂
