CRANBERRY PECAN BREAD PUDDING
Cranberry pecan bread pudding is delicious!
Cranberry pecan bread pudding is so festive and equally delicious. It’s great for the holiday season but I recommend making this dish all year round. Bread pudding is such a simple dessert and takes very little effort to prepare. You can use any kind of bread you like. I use day old biscuits, sandwich bread, hotdog and hamburger buns, etc. I love this dish for brunch or dessert. It’s wonderful with our homemade vanilla sauce or dusted with powdered sugar. You may also like our apple bread pudding.
Cranberry Pecan Bread Pudding
6 cups of bread, cut into 1 inch pieces
1 cup of hot water
1/4 cup of melted butter
1 teaspoon of vanilla
1/2 cup of whipping cream
2 eggs
1/2 cup of maple syrup
1/2 cup of chopped pecans
1 cup of fresh cranberries
Mix bread and hot water in one bowl. Mix all other ingredients together and pour over bread. Mix together gently. Place mixture in a 2 quart baking dish (I used a 10 inch cast iron skillet) and bake on 350 for 35-40 minutes or until done.
Serve with our homemade vanilla sauce or dust with powdered sugar.
