NUTTY APPLE BREAD PUDDING

Nutty Apple Bread Pudding - Copy

This Apple Bread Pudding recipe is so good. My family loves bread pudding and this apple bread pudding is a favorite.  I am not fond of bread that has been frozen so I used leftover hot dog and hamburger buns to make this pudding.  You can use any kind of bread you like such as French bread, biscuits, whole wheat bread, etc.

Apple Bread Pudding

6 or 7 cups crumbled bread, broken in about 1 inch size pieces
1 cup hot water
1 cup brown sugar
1/4 cup butter or margarine or 4 tablespoons, melted
1 teaspoon vanilla extract
1 teaspoon ground nutmeg
2 eggs
1 teaspoon ground cinnamon
1/2 cup evaporated milk (can use regular milk)
1 cup raisins
1 cup grated apple (1 large or 2 small apples peeled and grated)
2/3 cup walnut pieces or nuts of your choice

Crumble bread in large bowl and pour the hot water over the bread.  In another bowl combine the remaining ingredients except for the nuts and whisk together.  Add crumbs and mix well with spoon.  Spray a 9 x 9 square baking dish and pour in bread mixture.  Sprinkle walnuts over top.  Bake in preheated 350 degree oven for 35 to 40 minutes.  Makes about 8 servings.  Great with ice cream and caramel sauce recipe below.

Caramel Sauce
1/2 cup white sugar
1 cup brown sugar
4 tablespoon butter or margarine
2 tablespoons corn syrup
2 teaspoons vanilla extract
1/2 cup evaporated or regular milk

Mix all ingredients in sauce pan and bring to boil on top of the stove.  Let boil one minute.  Remove and cool.  This sauce thickens as it cools.  Pour over bread pudding or ice cream.

Note: This sauce keeps well in the fridge and is great over ice cream, cakes, cinnamon rolls.  Reheat in microwave before using.  Enjoy!
