CINNAMON CHIP BANANA MUFFINS
Cinnamon chip banana muffins are so good.
Make these cinnamon chip banana muffins with overripe bananas you have on hand for a real breakfast treat. I made these muffins using my recipe for my homemade cinnamon chips that I had frozen and needed to use. You can also use cinnamon chips you buy at the store but I always have a hard time finding them and so I make my own and freeze what I have leftover from a recipe. Cinnamon chip banana muffins are so delicious with coffee and one of our favorite cinnamon recipes.
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 sticks butter or 12 tablespoons, softened
3/4 cup white granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups buttermilk
2 ripe bananas, mashed
2 cups cinnamon chips
Whisk together the flour, baking powder, baking soda, salt and ground nutmeg in a bowl. Cream the butter, sugar and eggs using a mixer. Add vanilla extract, flour mixture and buttermilk and continue mixing until all ingredients are wet. Fold in bananas and cinnamon chips with a spoon. (You can dredge cinnamon chips in a little flour if you are afraid they will sink to the bottom). Spray a 12 cup muffin pan with cooking spray, fill 1/2 to 3/4 full and bake in preheated 350 degree oven for 35 minutes until golden brown on top. Makes 18 muffins. Enjoy!

These muffins are delicious! So moist! I wasn’t sure if I’d like the homemade cinnamon chips, so I only added one cup of them, but they’re amazing!
My muffins only needed to cook for 20 minutes, so watch your time.
Don’t be afraid to make the homemade cinnamon chips (a double or triple batch) to add to these great muffins!
