We are a big fan of butter swim biscuits because they are so easy to make. You don’t have to roll them out or cut them out! These are the perfect way to start the day and anyone can make these biscuits. We love the addition of blueberries and you can also add a glaze if you like and we have included that recipe in the recipe card!

We love these biscuits made the way they are and people always ask if they can use milk. Yes, some people use milk, but we highly recommend the buttermilk. The fat content is higher, which just makes the biscuits better.

Blueberry Butter Swim Biscuits

Blueberry Butter Swim Biscuits are a great way to start the day. You can add a glaze if you like or leave it off like we did.

Ingredients
 

  • 1 stick unsalted butter or 8 tablespoons melted
  • 2 1/2 cups all-purpose flour
  • 1/3 cup white granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries could use frozen
  • 2 cups buttermilk

Glaze Ingredients:

  • 1/2 teaspoon vanilla
  • 1 cup powdered sugar
  • 3 tablespoons milk more or less

Instructions
 

  • Melt butter in 9 x 9 or 8 x 8 baking dish. In a mixing bowl whisk together the flour, sugar, baking powder, baking soda, salt and blueberries. Add buttermilk and stir with spoon until dough comes together and makes a ball. Press biscuit dough into pan with melted butter. Cut into 9 squares with a knife. Bake in preheated 425 degree oven for 20 to 25 minutes until brown on top. Makes 9 biscuits.
  • Can add glaze below or leave it off if you want.

Glaze Instructions:

  • Combine and mix with spoon until consistency you can drizzle over cooked and cooled biscuits.

  3. Never got to taste it because my oven caught fire just as the timer rang. The butter overflowed on to the aluminum foil that I put under the lower rack. Glad I did it it could have been worse.
    Never had this happen with any other butter swim biscuit recipes, I use fresh blueberries too. And the biscuits were not ever finished baking after the time given in the recipe. They would have needed to go longer. We are okay no one got hurt but a messy clean up . Something in the recipe which I followed faithfully isn’t right. Sorry , loved other recipes of yours.1 star

    1. Okay.. well that is very unfortunate.. however I have NO idea what could have went wrong… but there is nothing wrong with the recipe. We just received a comment this morning of someone who made them and loved them. ❤️
