Beef and Cabbage Stew

Beef and cabbage stew is an easy recipe made in the crock pot or slow cooker and great for a busy weeknight meal or just anytime you want a delicious stew.  If there is one vegetable my family loves, it is cabbage and we have it a lot in different dishes.  You might want to check out our recipe for the cornbread muffins shown in the photo above.  These muffins are a perfect addition to serve with this stew.  We like this stew kind of spicy with lots of black pepper but you can adjust the spices to your own taste.

Beef and cabbage stew will quickly become a favorite meal.

1 to 1 1/2 pounds of lean beef, chuck or stew meat cut in bite-sized pieces

2 to 3 tablespoons of oil or butter

1 cup chopped onion

1 cup chopped celery

2 to 3 carrots, scraped and cut into rounds

1/2 large head of cabbage, chopped or about 4 or 5 cups

3 to 4 medium potatoes, peeled and cut into chunks

1 (8 ounce) can tomato sauce

1 (14.5 ounce) can beef broth

1/2 cup water

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon minced garlic

1/2 teaspoon smoked paprika

1/2 teaspoon chili powder

Brown the stew meat, onions and celery in the butter or oil in a skillet on top of the stove.  Add to crock pot or slow cooker along with carrots, cabbage and potatoes.  In a bowl whisk together the tomato sauce, beef broth, water, black pepper, salt, minced garlic, paprika and chili powder.  Pour over ingredients in crock pot.  I make this in a 3 quart crock pot.  Cook on low for 6 to 7 hours or high for 4 to 5 hours or until all vegetables are well cooked.  Makes about 3 quarts of stew or 6 to 8 servings.  Enjoy!
