BANANA OATMEAL COOKIES
Banana oatmeal cookies are wonderful because you can add so many different ingredients to the recipe.
Your children, grandchildren, hubby and everyone else in the family will love these banana oatmeal cookies. They are a soft, chewy cookie that won’t last long. Wonderful with coffee or milk for a snack. Share some of these cookies with a friend or neighbor! 1 stick butter or one half cup or 8 tablespoons, softened
1 cup brown sugar
1 egg
1 1/2 teaspoons vanilla extract
4 bananas, mashed
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3 cups quick-cooking oats, uncooked
Cream butter, brown sugar, egg and vanilla extract with mixer in a large bowl. Mix in mashed bananas. In a smaller bowl whisk together the flour, baking soda, salt, cinnamon and nutmeg. Combine with first ingredients and continue mixing with mixer. Pour in oats and mix all together. Drop by spoonfuls onto a sprayed or greased baking sheet and bake in preheated 350 degree oven 10 to 12 minutes. Makes about 30 large cookies.(I use about 2 tablespoons of cookie mix per cookie because we like them large) You can easily get 36 smaller cookies from this.
Note: You can add peanut butter chips, chocolate chips, nuts, white chocolate chips, raisins or even coconut to these cookies. These banana oatmeal cookies are very versatile. I usually divide my batter into 3 bowls and add all kinds of chips, nuts, etc. to make the cookies more interesting. Enjoy!

These look delicious but I’ve always had a problem with flat oatmeal cookies – any ideas? Thank you!
I don’t know why they would not rise up unless your baking soda or baking powder is not good. Also, if you turn the broiler on to brown them or something that will cause them to fall.
