APPLE CAKE BARS
Apple cake bars are delicious with my caramel drizzle.
These apple cake bars are like a cake but not as thick and they are great with ice cream on top or with your morning coffee. The caramel drizzle really makes this recipe but your could add a cream cheese frosting, just sprinkle on some powdered sugar or add my basic powdered sugar glaze recipe.
My family goes crazy for pumpkin and apple recipes in the fall but I love these apple cake bars anytime.
These apple cake bars are a perfect fall recipe.
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 stick butter or 8 tablespoons or 1/2 cup, melted
2 teaspoons vanilla extract
3/4 cup applesauce
3 cups chopped apples, peeled (about 3 large apples)
1 cup chopped nuts, pecans or walnuts
Whisk together the flour, baking powder, salt and cinnamon in a large bowl. Combine the brown sugar, white sugar, eggs, melted butter, vanilla extract and applesauce and stir with spoon to mix. Mix together with the flour and spices with a spoon. Fold in the chopped apples. Spread in a 9 x 13 sprayed baking pan. Mixture will be thick. Sprinkle chopped nuts over top. Bake in preheated 350 degree oven for 25 to 30 minutes. Do not overcook. Remove from oven and let cool before adding frosting or drizzle. Makes about 12 bars depending on the size you cut them.
Caramel Drizzle:
1 cup brown sugar
1 stick butter
1/4 cup milk
1 teaspoon vanilla extract
Combine brown sugar, butter and milk in a saucepan on top of the stove. Bring to a boil and boil for about one minute. Remove and let cool. Bringing to a boil and cooking takes about five minutes total time. Makes 1 cup. Drizzle over cake bars. Use remaining syrup for ice cream, pancakes, waffles, cake or pie. Keeps well in fridge. Syrup thickens as it cools.
