BACON CHEDDAR POPOVERS
Bacon cheddar popovers are a favorite with my family.
This is an easy recipe and you don’t have to have a popover pan. You can also use a regular muffin pan for these and fill your muffin cups almost to the top. The bacon and cheddar is so good in the popovers. They are great with any meal. Serve them for breakfast with butter and your favorite jams and jellies for a delicious treat with your morning coffee. I can eat these popovers for a snack even though they are best served hot from the oven. Everyone loves these and children will love them, too. Bacon cheddar popovers will quickly become a favorite bread recipe.
2 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
3 slices bacon, cooked, drained and crumbled
3/4 cup shredded cheddar cheese
2 tablespoons butter, melted
3 eggs
1 1/2 cups milk
Whisk together the flour, baking powder and salt. Fold in the crumbled bacon and cheese with a spoon along with the melted butter. In a separate bowl beat the eggs and milk together with a fork and then add to the flour mixture. Stir all ingredients with a spoon just until moistened. Don’t over mix. Spray a six cup popover pan or muffin tin with cooking spray. Fill cups almost to the rim. Bake in a preheated 450 degree oven for 15 minutes and then reduce heat to 350 degrees and continue baking 15 to 20 minutes until golden brown on top. Makes 6 large popovers. Enjoy!
