We love this Hamburger Potato Soup, it’s hearty, versatile, and delicious! Add our wonderful fried cornbread for a real treat. You can make this dish on top of the stove or in the crock pot. It would be perfect for tailgating or any cold-weather activity. This soup will keep for a few days and reheats really well.
SWAPS & ADDITIONS
You can swap out the hamburger for ground beef or Italian sausage. You could also add in green beans, okra or celery. Leave out the spinach if you like and you can easily switch up the spices.

If you want a creamy cheese that actually melts, it’s best to shred your own from a block of cheese. It’s significantly better and works great in this recipe!

Hamburger Potato Soup
Ingredients
- 1 pound ground beef
- 1 cup chopped green onion or 1 medium onion
- 2 teaspoons minced garlic
- 1 cup chopped or sliced carrots
- 1/2 cup frozen corn
- 1 cup chopped fresh spinach
- 2 14.5 ounce cans beef broth
- 3 to 4 medium potatoes peeled and cut up
- 1/2 cup water
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 teaspoons dried basil
- 3 teaspoons dried parsley flakes
- 1/2 cup shredded sharp cheddar cheese
- 1 cup milk
- 2 teaspoons cornstarch optional, used to thicken soup only
Instructions
- Brown the hamburger, onions and minced garlic in a skillet on top of the stove. Remove, drain and put in soup pot or crock pot. Add remaining ingredients to soup pot or crock pot and if cooking on top of the stove, cook until potatoes and carrots are soft.
- Cook in crock pot for 6 hours on low or 4 hours on high.
- Once cooked, garnish with cheddar cheese.

This soup was introduced to me by my husband when we were just married. When he was a boy scout they would cook out over a fire in a pot. He called it Mulligan stew or Hobo stew. They used everything but spinach, cheese and the milk. Neither one of us are supposed to eat beef, so I use ground turkey and leave out the spinach. Great for a cold night with a hearty bread.

I messed up and used brown gravy mix instead of beef broth. How can I fix it? Also the basil and parsley was too overwhelming for me. Thanks.

Very good. Husband doesn’t like corn in soup, so left that out. Except for the meat, I doubled everything. I don’t like cooking every day so I want meals to last 2-3 days. We’ve loved all the recipes I’ve tried. Thank You!!
We love this. I leave the spinach out. My husband is allergic. So I add in some frozen green beans. Frozen hold up better. It was is good. My family loves it.

This was really easy to put together and I am excited to try this tonight. I have kale and swiss chard in the garden so when it stops raining, I’ll run out and grab a bit to put in the soup. (My spinach bolted and I haven’t gotten around to reseeding.) I have a feeling my family will enjoy it.
I made this yesterday with lower fat hamburger (93pct) but otherwise the same. I left out the milk (lactose intolerant) but otherwise used recipe unchanged. This is very good. A nice change from my regular soup rotation. I love the texture of the crumbly ground beef and the corn kernels. I didn’t find the cheese added all that much, so if you are watching your fat grams, just leave it out and add a spoonful of mild or hot salsa for a kick and a change-up. It’s better the second day, as most soups can be. If you want to pretend it’s “cheeseburger soup” for the kids, add a square of American cheese and a pile of very finely shredded letttuce and even a pickle on top. You can hid other veg in here for a healthy dinner.
I use Lactose free milk. Can’t tell any difference from whole or lie fat milk. Was tired of drinking soy all the time. Don’t like almond, etc. nuts don’t mix with everything
Made this last week in the crockpot. Husband raved about it. I left out the spinach, that’s the only change I made. We had 3 meals from it.
I made this soup for our tailgating party! So hearty and so good. I added your cornbread muffins and they all raved about it. Plan to definitely keep this one in the rotation. I love all your recipes.
I made this soup for the third time yesterday!! I cook it in the crockpot. This time I used half ground beef and half sweet Italian sausage,,,,,,,yummm
Used potatoes, carrots, onions from the garden, frozen corn kernels, and fresh spinach. We enjoy it with a salad……..
Hi, I tried this last night and my husband really loved it. I did reduce the parsley to 2 tsp and since I was out of milk—-I used half evaporated milk and half water (courtesy of the Internet!)
Oh I left out the spinach; he doesn’t like it in soup
I whisked the milk and cornstarch separately and added it when the potatoes were just about done. I also made this on the stove top. I added more cornstarch to try to thicken it a bit more.

I just wanted to expand on my comment:
My husband said it was one of the best soups. That surprised me only because I had once showed him a different recipe for a cheeseburger-like soup and he either turned it down or one of us wasn’t sure he would like it. So I showed this to him on a whim.
We almost did not make it because of the spinach (he doesn’t like that in soup) until I informed him that I could leave it out.
The beef vegetable soup I made and reviewed also got high praise. Since it made so much we took some to a neighbor who also let me know how much he liked it.
Both were a blessing to me personally since they are affordable, make a good amount (I can give some away) or I can freeze them.
I made it clear that these were not my recipes, but yours. I played a bit with them but you created them.
I have a few of your crock pot recipes to try plus one more soup recipe. Am sure they will be a hit.

I’ve found that when you freeze potatoes they get spongy!. I make soup & leave the potatoes out, freeze ,then when you’re ready to eat just boil your potatoes & add to your soup!
