YUMMY BREAKFAST BURRITOS
My family loves burritos. These are great for any meal but we like them best for breakfast. It seems no matter how much I make there is never any left over!
1 pound pork sausage 1 small onion, chopped 1 small green pepper, chopped 1 teaspoon minced garlic 1/2 teaspoon black pepper 1 small can green chilies, drained (Optional) 1 tomato, chopped 6 eggs Salsa Sour Cream (Optional) Shredded cheese of your choice Tortillas (I used the wheat ones) In a large skillet, cook sausage, green pepper, onion, garlic and pepper until done. Add eggs stirring to mix and continue cooking until eggs are done. Add chilies and let heat. Remove from heat and top with shredded cheese, tomato, sour cream and salsa. Cook tortillas according to package directions. (I heat mine in the microwave) Fill tortillas with sausage and egg mixture, roll up on plate and add more cheese or salsa if desired. Enjoy! Note: You can halve this recipe for two people. I do it all the time.
