SWEET AND SPICY CROCK POT CHICKEN
This super easy crock pot chicken recipe is one your family will love. Only 4 ingredients and has a wonderful flavor. This chicken recipe is really versatile, you can enjoy this chicken over rice, in a tortilla topped with sour cream and cheese or on a salad. I like to make this on a Sunday and enjoy it a few different ways. You can easily double this recipe too.
Sweet and Spicy Crock Pot Chicken
1.5 lbs of chicken breast
3 tablespoons of taco seasoning
1.5 cups of chunky mild salsa (can use hot)
3/4 cup of Apricot preserves (I used sugar free)
Add chicken to the crock pot, mix remaining ingredients together in a bowl and pour over chicken. Cook on low for 5-6 hours or high 3-4. Shred chicken and serve over rice or in tortilla shells topped with cheese and sour cream. Wonderful over a salad, topped with tortilla chips too.

Made this for the first time yesterday…and it won’t be the last! So easy and so good! I put it in low carb flour tortillas for dinner last night, and had some over rice for lunch today, and both were excellent! A note for anyone who needs to watch their carb intake: do try to find the sugar free apricot preserves as noted in the recipe, as the regular preserves have 13g of carbs per one tablespoon serving, while the sugar free version has just 5g in one tablespoon.
I make this chicken dish just about every other week. Love it. . Serve many different ways.
I find the7-8 htrs on low in the crockpot is way too long. I cook on low for 4 hts.
