SOUTHWEST CHOPPED SALAD
This Southwest Chopped Salad is so easy to make and absolutely delicious.
This salad would be great to take to any event and it’s super easy to make. It also keeps well and is just as good the next day. This easy chopped salad is great to make on a Sunday and enjoy throughout the week too. So versatile as you can switch up the toppings, however we love the zesty ranch dressing! This is a great alternative to a sour cream or mayonnaise based salad.
Southwest Chopped Salad
4 cups of chopped romaine lettuce (can use iceburg or spinach)
3 hard boiled eggs
1 can of pinto beans (drained and rinsed)
5 pieces of bacon cooked, drained and chopped
1/2 cup of red onion, chopped
1/2 cup each of sweet peppers (I used one red, orange and yellow)
Dressing Ingredients
1/4 cup of Ranch Dressing
1/2 cup of picante salsa (I use mild, if you like it spicy, use a hotter salsa)
Put all salad ingredients in a bowl. Mix dressing ingredients together and pour over salad, mix together and chill. I think this salad is best served after an hour or so in the fridge.
Notes: You could add cheese, olives, corn, black beans or any other toppings you like.
