4cupsof chopped romain lettucecan use iceburg or spinach
3hard boiled eggs
1can of pinto beansdrained and rinsed
5piecesof bacon cookeddrained and chopped
1/2cupof red onionchopped
1/2cupeach of sweet peppersI used one red, orange and yellow
Dressing Ingredients
1/4cupof Ranch Dressing
1/2cupof picante salsaI use mild, if you like it spicy, use a hotter salsa
Instructions
Put all salad ingredients in a bowl. Mix dressing ingredients together and pour over salad, mix together and chill. I think this salad is best served after an hour or so in the fridge.
Notes
You could add cheese, olives, black beans or any other toppings you like.
