SOUR CREAM BANANA MUFFINS

 

Sour Cream Banana Muffins - Copy Muffins are so good in the morning with a cup of coffee, at night with a glass of milk or just anytime.  These sour cream banana muffins are a great way to use up extra bananas and the chocolate chips really add to this recipe.  Make these muffins for an after school snack for the kids or let the children or grandchildren help you make these banana treats.  You could add raisins to these muffins if desired or you could leave out the nuts.  This recipe would make a wonderful gift for a sick friend, new neighbor or give them just for a good deed.

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 cup brown sugar
2 bananas, mashed
1 cup sour cream
1/4 cup butter or margarine, softened
2 teaspoons vanilla flavoring
2 eggs
3/4 cup walnuts or nuts of your choice
3/4 cup chocolate chips
 
Whisk together whole wheat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon in a bowl.  In a mixing bowl with mixer cream butter and sugar.  Add eggs, sour cream, banana and vanilla flavoring. Next add flour mixture to creamed mixture and mix well.  Fold in nuts and chocolate chips.  Spray muffin tins.  Bake in preheated 350 degree oven 20 – 25 minutes.  Makes 12 large muffins.  Enjoy!
