SMOKED PAPRIKA CHEESE POTATOES

Smoked paprika cheese potatoes are a family favorite.

These potatoes are so easy to make and are a wonderful side dish. They go great with a hearty salad, burgers, pork chops and they also make an easy appetizer. Super versatile since you can use the cheese your family loves. I highly recommend serving these with our delicious homemade buttermilk ranch dressing for dipping!

Smoked Paprika Cheese Potatoes

1.5 pounds of small potatoes. Red or honey gold are my favorite. Cut them length wise.

1 cup of grated Romano Parmesan cheese

2 tablespoons of olive oil, divided

1 teaspoon of smoked paprika

1 teaspoon of garlic powder

Preheat oven to 400. Mix potatoes, smoked paprika, garlic and one tablespoon of oil in a bowl. Stir until thoroughly mixed and potatoes are covered with oil and  spices. Take a 9X13 casserole dish and cover the bottom with the other tablespoon of oil. Then shake cheese all over the bottom of the dish. Next place potatoes, cut side down on top of cheese. You want to kind of twist the potatoes on top of the cheese to make sure the bottom of the potato (the sliced side) is covered with cheese. Bake for 20-25 minutes until cheese is a bit crispy and potatoes are done. Enjoy!
