1.5poundsof small potatoes. Red or honey gold are my favorite. Cut them length wise.
1cupof grated Romano Parmesan cheese
2tablespoonsof olive oildivided
1teaspoonof smoked paprika
1teaspoonof garlic powder
Instructions
Preheat oven to 400. Mix potatoes, smoked paprika, garlic and one tablespoon of oil in a bowl. Stir until thoroughly mixed and potatoes are covered with oil and spices.
Take a 9X13 casserole dish and cover the bottom with the other tablespoon of oil. Then shake cheese all over the bottom of the dish.
Next place potatoes, cut side down on top of cheese. You want to kind of twist the potatoes on top of the cheese to make sure the bottom of the potato (the sliced side) is covered with cheese. Bake for 20-25 minutes until cheese is a bit crispy and potatoes are done.
