Slow cooker salsa soup is so easy to make and very versatile.

Slow Cooker Salsa Soup

This is a wonderful soup to make when you want something you can just throw together and put in the crock pot or slow cooker and forget it.  A delicious weeknight meal anytime or you could double or even triple this recipe and serve for a tailgating party along with some great bread.  This soup keeps well refrigerated for several days and can be reheated in the crock pot or on the stove or in the microwave.  You might also like to check out our recipe for crock pot creamy potato soup.

Slow cooker salsa soup makes a great comfort food meal for your family.

2 1/2 cups cooked chicken

1 cup chopped onion

1 cup chopped green pepper

1 cup frozen corn, (no need to thaw)

1 (15.5 ounce) can black beans, rinsed and drained

1 (14.5 ounce) can chicken broth

2 cups water

1 1/2 cups thick and chunky salsa

1/4 teaspoon black pepper

1/2 teaspoon salt, optional

1/2 teaspoon chili powder

1/2 teaspoon cumin

Place all the above ingredients in a 3 1/2 quart crock pot and cook on low for 6 to 7 hours or high for 5 to 6 hours.  Makes 6 to 8 servings.  Enjoy!

Note:  You could add green chili peppers or a small can of black olives to the ingredients and change the spices to make it your own.  I cooked a couple chicken breasts I chopped up and browned in butter if you want to cook the chicken.

Ingredients
