Slow Cooker Salsa Soup

This is an easy dish and a very versatile recipe.

Ingredients

  • 2 1/2 cups cooked chicken
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup frozen corn (no need to thaw)
  • 1 (15.5 ounccan black beans rinsed and drained
  • 1 (14.5 ounccan chicken broth
  • 2 cups water
  • 1 1/2 cups thick and chunky salsa
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt optional
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  • Place all the above ingredients in a 3 1/2 quart crock pot and cook on low for 6 to 7 hours or high for 5 to 6 hours. You can top with cheese, sour cream and tortilla chips.

Notes

You could add green chili peppers or a small can of black olives to the ingredients and change the spices to make it your own.
