Ritz cracker treats are so good and so easy to make.  They are great treats for the holidays or just anytime and children love them as well as adults. They make great gifts, too.

2 cups chocolate chips, melted (I do mine in the microwave)
2 tablespoons shortening, Optional (This is solid shortening like Crisco and you cannot substitute butter or margarine.
1/4 cup peanut butter ( I like to use the crunchy, you can use the smooth, too)
Ritz crackers, vanilla wafers, graham crackers
Note:  You can also use jelly with your peanut butter as a spread. You can add honey to the peanut butter and you can use marshmallow fluff. Use your imagination with this recipe and you can make all kinds of great treats.
Spread your filling on the crackers, wafers or graham crackers.  Melt the chocolate and shortening either on the stove or in the microwave. I do it in the microwave for about 2 1/2 minutes. It may take less or more time depending on your microwave. Microwave just long enough that it starts to melt and stir till smooth.   Dip the sandwiches in the chocolate. Add sprinkles if you want to decorate.  Place on wax paper in fridge for an hour or so until chocolate hardens.  Makes 8 to 10 treats.
Note:  The addition of shortening creates a smoother and more manageable consistency than melted chocolate alone. Doing this helps to make a more evenly coated product.
