PEANUT BUTTER POKE CAKE
This Peanut Butter Poke Cake is a huge favorite in our house and different that most peanut butter poke cake recipes. Believe it or not, I’m not a fan of peanut butter and chocolate cake together, so this cake has zero chocolate. It’s all about the peanut butter! I also refer to this cake as the Fluffernutter Cake. If you ever made Fluffernutter sandwiches when you were a kid (marshmallow creme and peanut butter), then this cake is right up your alley!
Ingredients for Peanut Butter Poke Cake
1 yellow cake box mix (plus the ingredients to make the cake)
1 1/2 cups of smooth Peanut Butter
1 7 ounce jar of Marshmallow Creme (I used Kraft Jet Puffed Marshmallow Creme)
1 cup of Confectioners Sugar
1 container of Cool Whip
Cooking Directions
Make cake according to box and let it cool completely. Poke holes in the cake with a wooden spoon handle. Microwave the entire jar of marshmallow creme and 1/2 cup of peanut butter in a medium bowl. This takes about 40 seconds. I took it out after 20 seconds and stirred it and then put it back in for another 20 seconds. Pour the warm mix over cake. Make sure it goes in the holes you made with the spoon.
Then heat 1/2 cup of peanut butter in the microwave . You want the peanut butter a bit warm and easy to mix, about 20-30 seconds should be fine. Mix it in to the container of cool whip. Frost the cake with the cool whip mixture. For the topping, mix 1 cup of confectioners sugar and 1/2 cup of peanut butter with a fork until the mixture crumbles. Sprinkle mixture over the top of the cake.
This cake should be refrigerated.
