OVEN-ROASTED POTATO BITES
My family can’t get enough of these oven roasted potato bites with garlic and oil! We like them better than fries and you can make them so many different ways. We like the garlic! Make them like the recipe or use your own combination of spices to make them your own. They are great leftover for breakfast with eggs, too. A great side dish for any meal.
Oven roasted potato bites are easy and a great side dish with any meal.
6 to 8 medium potatoes, peeled and cut into chunks
4 tablespoons olive oil or Canola oil (I have used both)
1/2 teaspoon garlic powder (can use more)
1/2 teaspoon salt
1/4 teaspoon pepper
Spray a large baking sheet. In a large bowl, combine potatoes and other ingredients. Stir well to make sure the potatoes are well coated. Spread out on baking pan. Bake in preheated 425 degree oven for 50 – 60 minutes, turning about 4 times while cooking. Serves 4. Enjoy!
Note: You can use Italian seasoning, Parmesan cheese, dried leaf thyme or whatever seasonings you like in this dish.

I enjoy making these I like to add old bay seasoning to them as well. YUMMY!
