I love my eggs scrambled and I guess I thought everyone knew how to make scrambled eggs.  How quickly we forget as we get older!  There was a time when I had no idea how to make toast!  Recently, someone asked me how to make scrambled eggs.    So, this is the way I do it.  I am sure there are many different ways.

4 large eggs
4 tablespoons water (I prefer water to milk. I think it makes fluffier eggs.)
1/4 tablespoon salt
1/8 tablespoon pepper
1/4 teaspoon dried parsley flakes
About 1 tablespoon cream cheese
1 tablespoon butter or margarine
Whisk together all ingredients in a bowl except butter and cream cheese.   Heat skillet to medium. Melt the butter in the skillet.  When butter begins to sizzle, add eggs.  Let eggs cook until they start to get solid.  I use a wooden spoon and drag the eggs to the middle of the pan from the outside edges.  Pile into center of pan and add cream cheese. Continue to cook until just a little wetness is left in the eggs. Remove and serve.  Can add extra salt and pepper.  Makes enough for 2 people. Recipe can be doubled.  Enjoy!
Note:  You could add hot sauce, chopped onions or shredded cheese to the egg mixture before cooking.  Just whatever you prefer.
